Many people know that I am an advocate for cutting back on animal products. Not necessarily cutting them out entirely, but rather reducing consumption of meat and dairy and increasing consumption of vegetables, whole grains, and vegetarian sources protein.
Let me start by saying that this is not a PSA for vegetarianism or veganism. A few people have recently asked me about the National Meatless Monday campaign…What is it? What’s the point? Why should I care?
Since it is Monday, perhaps today is a good day to discuss.
