This Mediterranean salad is so delicious and is great for cold leftovers the next day.
¼ cup of: olive oil, fresh parsley, chives,
½ cup of: lemon juice, feta, kalamata olives
1 tablespoon: balsamic vineagr
1 of the following, chopped: red onion, bell pepper
2 chicken breasts (cooked and diced)
Salt and pepper to taste
Boil 2 cups of water with 2 chicken bouillon cubes, and 1 smashed clove of garlic in a saucepan.
Add 1 cup of quinoa and reduce heat –simmer until water is absorbed and quinoa is tender (about 15 minutes). Discard garlic clove and put quinoa to the side.
Add 2 diced chicken breasts, onion, olives, pepper, feta, lemon juice, vinegar, and olive oil. Stir.
Serve warm or cold!
